Peel the potatoes and cut into thin slices. Cut the tomato, onion and finochio into thin rounds. Cut the lemons into thin slices. Transfer the potatoes, onions and finochio to a bowl. Drizzle with some olive oil and season with salt, pepper and some fresh thyme. Toss to coat. Spread the vegetable mixture onto the bottom of a baking pan.  Season the fish with salt and pepper and drizzle with some olive oil. Fill the belly cavity with lemon slices and some fresh rosemary. Place the fish over the layer of vegetables in the baking pan. Cover with 3 tomato slices. Add the wine, olive oil and spices. Bake for 50-60 minutes. Place the fish fillets on top, with the skin facing up. Brush the fillets with a little olive oil and season with a little salt and pepper. Close the packages by folding the oil paste together with the aluminum foil into a crescent. Press the joint very well so that it does not open - it is very important not to lose liquids from the oil paste. Then, lay them on a plate. Bake in a preheated oven at 240 0C for 15\u0384. During baking, the packages inflate like a balloon. thinly sliced<br>\n\n400g can chopped tomatoes<br>\n\n500ml hot fish stock<br>\n\n2 skinless pollock fillets (about 200g), thawed if frozen, and cut into chunks<br>\n\n85g raw shelled king prawns<\/p>\n<p class=\"translation-block\"><span style=\"text-decoration: underline\"><em>Method<\/em><\/span><br>\n\nHeat the oil in a large pan, add the fennel seeds, carrots, celery and garlic, and cook for 5 mins until starting to soften. Tip in the leeks, tomatoes and stock, season and bring to the boil, then cover and simmer for 15-20 mins until the vegetables are tender and the sauce has thickened and reduced slightly. Add the fish, scatter over the prawns and cook for 2 mins more until lightly cooked. Roughly chop the tomatoes, pick the thyme leaves and chop the fish into chunks.\n\nGently cook the fennel, leek, celery, most of the chilli and the garlic in olive oil over a medium heat, until soft. Add 1 litre water and the wine, bring to the boil, then reduce heat and simmer until vegetables are cooked. Add the tomatoes, thyme and fish. When fish turns opaque, add the prawns, mussels or clams and simmer for 2 minutes until prawns are cooked and mussels are open.
